Something that came up for me is how pytates can block iron and calcium among other minerals in the diet.  I saw how they were developing grains low in phytates for the sake of cattle and the environment.

BUt what about people?  If you are an over wieght american eating pytates in grains legumes and flax is good for you cause you probably have too much iron anyway.

But poor children around the world have anemia because of anti nutrients.

Flax can cause niacin defieciency too.

Do you know of any other anti nutrients.

How can we help poor people with phytate free bread?
Chad just came in from another thread that is mentioning Monsanto.  They are promoting a genetically engineered grain and saying it is for the underdeveloped nations that are starving to death.

the film I saw was called The Future of Food from 2007 so I am certain there are more current films somewhere, but you should see it, and decide for yourself if the goal is truly to feed the nations.

bye for now,
kimberly
