The problem is that Jesus didn't fulfill any of the ACTUAL Messianic prophecies. And to say that he will when he comes again is not bibical. No where in the Tanakh does it say that the Messiah will die and then come back a second time to fulfill the prophecies. It was supposed to be a one shot deal.
Have you read Genesis 1-3, Deuteronomy 18:15, Daniel 7-9, Isaiah 7:14 and 53?

Where does the Scripture say it's gonna be a "one shot deal"? That is the (false) assumption of Rabbinic Judaism, but it is not in Scripture.
Wasn't Joseph initially rejected by his brothers, adopted by the Gentiles which he saved (from death) and brought prosperity to, and only
later povidentially revealed himself to and saved his fellow Israelites? If you study, you will find an INCREDIBLE parallel between the life of Joseph and Yeshua (son of Judah - Gen 49). Yeshua was rejected (Isaiah 52-53) by his blinded (Isaiah 6) brothers, but adopted by the Gentiles and provided them (Isaiah 49) with salvation. But he has not
yet been revealed to his brothers (as a nation) - he is still hidden in gentile (~Egyptian) trappings. The tearful, yet joyous reunion with Yeshua's brothers (Israel) is yet future.
Zech 12:10. Jer 31, Ezek 36, etc describe the new heart to be given to Israel in the new covenant upon Messiah's return. In that day it will be said:
Gen 50:20 But as for you, ye thought evil against me; but God meant it unto good, to bring to pass, as it is this day, to save much people (the whole world, not just Israel - Isaiah 49, Romans 11) alive.
And Israel will say "Baruch haba beShem Adonai"! Praise be to Immanuel who tabernacles among us again.

I can plug in many people who would seem to "fullfill" so called prophecies.

There are no other candidates besides Yeshua. Daniel taught that Messiah had to come and die for sin before the 2nd temple was destroyed - and Yeshua came exactly when predicted, being killed 40 years before the temple was destroyed exactly on Passover and rose exactly on First Fruits. And since he fulfilled these
prophecies, we trust he will fulfill the rest when he returns (as he claimed).

Special sign birth? That would be a baby that was named by Immanuel by his mother.
Spreading "Torah" to the nations? Uh, that would be the Jewish people.
Performed supernatural deeds? G-d warns us about that!
I guess you could say according to your bible that jc rode a donkey. So did many others in that time.
Willingly suffered and died for the sins of the world? G-d says no one can die for another's sins.
Rejected by his brothers? I thought all of his disciples were Jews as was his brother James.
Accepted by the nations? Tell that to the 2 billion Muslims.
